Sukuti is sun-dried, smoked meat — traditionally mutton or buffalo (buff) — that's rehydrated and cooked down with mustard oil, garlic, ginger, and timur. The drying process concentrates the flavour into something deeper and smokier than a regular meat curry, which is why Sukuti is one of the most requested Thakali snacks in Siliguri.
We serve Sukuti two ways: Fry, where the meat is tossed and seared with whole spices and fresh herbs, and Sadeko, a cold-marinated preparation with mustard oil, lime, chilli, and onion that's closer to a Nepali-style salad-curry. Both pair perfectly with a cold drink as a starter, or alongside a Thakali Thali.
